University of Nebraska-Lincoln Dining Services (“UNL” and “the University”) is looking to engage a vendor to create an on-campus restaurant for retail and board dining at the Abel Dining Center, 860 N 17th St Lincoln, NE. The University is looking for a Nationally branded Asian food concept that will include foods made fresh daily and served on premises at the Abel Dining Center. Dining Services is converting Able Dining Center from an “All You Care To Eat” (AYCTE) dining hall to a food hall concept. The food hall will have multiple food vendors. University Dining Services will operate all venues that are not leased to 3rd party vendors.

The University will provide the store front / service space, production space, Point of Sale (POS) equipment, water, electric, and trash services, in exchange for a percentage of the selected vendor’s gross sales. Proposals based on net sales will not be considered.

The selected vendor will provide their own labor and food. The selected vendor will adequately staff the restaurant to ensure a great customer experience. The number of employees and the hours of service will be negotiated with the successful vendor. The vendor will work with dining services to determine service goals. The University will have the right to approve all menu items.
